The day has come! It’s a week into Hot and Cold desserts and we are finally finishing the mysterious enigma that is the Icecream Bomb! This half orb is an explosion of flavors and pretty as a peach. We decorated our bombs with white chocolate and shortening whisked together and heated to 90˚F. I am quickly realizing that mint can be used across the boards…on everything… ever…

We also created something I like to call the apple burrito. This sweet roll is made by stretching dough super thin, much like as if I were going to make a lobster tail, and then rolling it around a fruit filling. Apples and cranberries went into our fruit burrito but I’m anxious to try these techniques with something different. I’m finding myself quickly appled-out as each Lab progresses. It seems to be everyone’s favorite ingredient.

I did notice that the rolls of apple and filo dough had a hollow hole where the filling cooked down and the dough puffed up. I’m wondering how this problem is fixed. For instance, would adding flour or some kind of stabilizer into the apple filling keep it from flattening to the bottom layer of the dough? I guess I’ll have to see for myself.

- Wait till properly cooled to cut the log.
